Another winter warmer soup that you absolutely cant go wrong with is a potato and bacon Soup. Usually I love to make a potato, leek and bacon soup but as I started to prep everything I realised I didn't have any leeks and I wasn't keen on doing a grocery run! haha
I used a really good quality, butchers smoked bacon for this recipe which made ALL the difference! Where you can, because it is a simplistic recipe, go for good quality ingredients where you can! :)
- 6/8x large potatoes peeled and chopped
- 2x rashers of good quality bacon finely chopped
- 1x onion, chopped
- 1 tablespoon of garlic, minced
- Water
- Vegetable stock powder (I use Vegeta)
- Salt and Pepper to season
- Optional extra - dollop of cream/sour cream/yogurt
In a cold stock pot, add in your bacon and turn up to a medium heat. By doing this will allow for the fat to render out of the bacon so you don't have to add any additional oil. Once starting to render out, add in your onion and garlic and soften. Add in the potatoes and cover with water and season with the desired amount of vegetable stock powder.
Once potatoes are cooked and softened, blitz/puree the soup and season as desired with salt and pepper. I love to add a decent amount of cracked black pepper!
Optional extra, when serving you can add a dollop of cream/sour cream/yogurt to add some creaminess to the soup!
