Who doesn't love a good lasagna? A perfect way to use up left over bolognese (if you have any!), make a meal to feed a crowd or a good way to stock the freezer!
I mix my lasagna up a bit (so it defiantly isn't a traditional way to make it - I just like to make it a bit lighter and pack it full of veggies where I can!).
So I use my bolognese made with pork + veal mince, tinned tomatoes, veggies galore and seasonings layered with lasagna sheets and instead of a more 'traditional' bechamel sauce, I use ricotta cheese mixed with frozen spinach! I think it still tastes just as delicious and it packs in even more goodies!
